Almond Joy Cookies




° 375 g of flour

° 180 g softened unsalted butter

° 75 g of sugar

° 75 g ground almonds

° 1 egg yolk

° 2 c. to c. bitter almond essence

° 1 c. to c. baking powder

° 30 whole blanched almonds

° 1 beaten egg yolk

° 2 c. to c. water



Preheat the oven to 180 ° C.

Line a baking sheet with parchment paper.

In a bowl, put the butter, sugar, bitter almond extract and egg yolk. Mix with a whisk until the mixture whitens.

In a second bowl, combine the ground almonds, the flour and the baking powder. Incorporate into the previous mixture then mix the dough.

Form dough balls by rolling them between your hands, then place them on the baking sheet. Flatten lightly with the palm of your hand and press an almond into the center of each cookie.

Mix the beaten egg yolk with the water and brush over the cookies, using a brush. Bake for 10 minutes.
