16 filo sheets
400 g sugar
250 g of blanched almonds
100 g walnut kernels
1 clove
1 slice of lemon
2 large spoon of orange blossom water
1 small spoon 1/2 teaspoon ground cardamom
1 small spoon 1/4 teaspoon allspice

1. In a saucepan, make a syrup by bringing 30 cl of water to a boil with 300 g of sugar, the cloves and the slice of lemon.
Let cool then add the orange blossom water.
2. Mix the blanched almonds, the ground cardamom, the walnut kernels, the allspice and 100 g of sugar.
3. Preheat the oven to 180 ° .
Butter a rectangular mold.
Superimpose 4 sheets of filo brushed with butter.
Spread a third of the almond mixture over it.
Cover with 4 sheets of filo, brush with butter and repeat the operation 2 times.
4. Brush the top filo leaves with butter, then, using a good knife, cut the baklava into diamonds.
Bake for 31 minutes, until the pastry is golden.
5. Pour the syrup over the very hot baklava and let cool.
Detach the diamonds and serve.
