Fast and easy Italian rustic bread at home, no kneading, no machine, no dutch oven, with only 2 hours rising time. Made by hand, with active dry instant yeast, flour and water and baked on a hot pizza stone.

 

It made us the perfect bread for soups, stews, bruschetta and sandwiches / panini use all week long.

 

Spin on Italian pizza dough, except I use warm water to make bread. Mix the flour, salt, and instant yeast and let it rise for two hours.

 

* Ingredients :

 

° Crunchy Italian Bread

Makes 2 loaves

° 1 1/3 cup warm water

° 2 1/4 teaspoon yeast

° 1 tablespoon brown sugar

° 1 1/2 teaspoon salt

° 1 1/2 teaspoons olive oil

° 4 cups flour

Put warm water, yeast and brown sugar in a mixing bowl. My heart and let it stand for a few minutes until it starts forming bubbles and foaming a little.

Add olive oil and salt. Mixing & adding flour . You need to adding enough so that dough comes out from sides  bowl. You need to mixing it with dough hook for a some min .

Cover the dough and let it rise until doubled for 30 minutes.

Roll out the dough, divide it in two, and shape into two loaves (double the recipe this time).

Covering with a damp cloth also let to doubled.

The oven is heated to 375 degrees.

 

They beat together:

° 1 egg

° 1 tablespoon of water

 

Greased raised loaves with egg mixture.

Making one long, quick piece in the middle of a loaf with a sharp knife.

Now that's the secret. Placing at least one cup of hot water in a shallow pan and placing it on shelf underneath the bread. The steam will make the crust turn out perfectly. You may require to adding a some water time cooking. You don't need it to steam .

Bake for 25-30 minutes or until loaves turn golden brown and become hollow when clicked.

Take it out of the pan and let it cool down on the shelves. I always like to rub butter onto the hot crust!
