I'll be honest: This latest semi-French french fries recipe is kind of awesome. Extremely crunchy and full of delicious garlic and Italian flavors. I can never refuse garlic and cheese over potatoes and I think you wouldn't be able to either!
Potatoes are my weakness. Often times, the sky-high metabolism is my younger brother and my brother jogging in the middle of the night to Wendy's / Carl’s Junior / Mickey-Ds / All That Is Open Fry.
I've since tried to deal with my addiction in my adult years by ordering french fries on the side only here and there when eating out, rather than using French fries with everything I've had for 20 years. A lot of times I only share the husband, he doesn't mind compromising a little ... or 60%. It's gorgeous like that.
And when I crave fried potatoes at home and I'm sweating, I usually make my own food rather than go to order. And this one ... well, Wendy's Natural Cut Fries has nothing on parmesan and garlic french fries! So when I say these things are worth making, I really mean it!
Ingredients
2 large potatoes, cut into slices the same size as regular French fries.
After peeling and cutting the potatoes, place them in a bowl of water with two cups of ice cubes. Soak for 30 minutes, then dry it with paper towels.
Put only dry ingredients in a plastic bag:
° 1 tsp grated parmesan cheese from
° 1/4 tsp salt
° 1/4 tsp garlic powder
° 1/4 tsp paprika
° 1/4 tsp black pepper
° 1 tsp of olive oil
* Directions :
1. The oven: Preheat the oven to 450 degrees. Baking time is 35 minutes. No need to flip French fries! Making French Fries: Spray a baking sheet lined with aluminum foil with cooking spray if you are using a regular cake tray. I use an Aire Gourmet baking sheet, and if you love these potatoes, it's worth the investment to buy one. Because olive oil is not smoked at high temperatures when using this baking sheet, the French fries have a wonderful golden brown color. (I prefer using parchment paper, which I do not grease, and makes removing french fries easy to prepare from the oven into the serving bowl.)
2. Soak the sliced potatoes in ice water for at least 30 minutes. Do not skip this step as it makes it brittle.
3. Place the sliced potatoes on a clean towel to remove moisture.
4. Mix all the dry ingredients in a plastic bag and mix with the potatoes and gently stir until they are covered. Sprinkle on it a tablespoon of olive oil. Flipping and kneading again for packing.
5. Organize potatoes in a one layer on a baking sheet & baking about 35 minutes . No need to turn potatoes while cooking. Make sure to check them often to see how they do. Remove any potatoes in a bowl lined with a paper towel so that they ripen early so that they do not soften. I also love using parchment paper for easy cleaning! Enjoy!

6. Making the potato slices: Prepare the potatoes as you would with French fries, except for cutting the potatoes into wedges, and follow the rest of the steps in the recipe. When it's time to bake the wedges, lay them on parchment paper to bake and leave for a few extra minutes to make sure they're done. No need to wrap while baking.
