Filled with lemon curd, these buttery cookies are baked, then sprinkled with a layer of vanilla and almonds. Lemon Cord Cookies have perfectly crisp edges with a soft, shiny center - a lemon-lover's dream treat !
I know, I know, it's Christmas and Biscuit Season. But I just had to make another cookie recipe for her to make before the New Year. I thought about waiting a few months to publish this recipe (save it for Easter or Spring), but decided it would be ludicrous to wait that long!
If you like shortbread and love lemons, this might be your favorite cookie. We couldn't stop taking it in my home!
* Ingredients :
° 1 cup unsalted soft butter
° 1 cup granulated sugar
° 3 large egg yolks
° 1 tablespoon of grated lemon peel
° 1 tablespoon fresh lemon juice
° 1 teaspoon kosher salt
° 3 cups all-purpose flour
° 1 cup lemon curd, or store bought
* Instructions :
Preheat oven to 350 degrees. And we cut two sheets of bread in half on parchment paper.
Mix butter and sugar in a large bowl with a blender until well combined.
Whisk in the yolks / lemon peel / lemon juice / salt as well, and whisk in the flour until moist lumps form. Collect the dough in a bowl to tie it.
Shape 1 teaspoon of the dough into 1-inch balls.
Place the balls on ready-made sheets, about an inch apart.
Using a key milled, also make a deep toothing in center of every ball.
Bake the biscuit until firm and golden in color for 21 minutes.
Take the biscuits out of the oven and fill the blanks with curd directly. Return to the oven and bake for 3 minutes to form curd.
Gently bake the rest of the biscuit and the edges of the powder with the confectioners' sugar.
