Cucumber salad is a classic combination! This particular recipe is so rooted in my German ancestors that they call it Gurkensalat. It is a popular side dish that has made its way to America.  There are two variants of cucumber salad that you may find, one featuring a mild vinaigrette, and the other a creamy version. Here's a recipe for the mild version of vinegar.

 

The creamy version contains a sauce made with sour cream, dill, garlic, sugar, and a little vinegar. Both types of vinegar and cream can also be found commonly in Southern cooking. While the recipe appears to have originated in Germany, it made its way into the southern United States via German immigrants. There are slight differences, of course, but this version is my favorite.

 

What type of cucumber should I use with my cucumber salad?

The English cucumber has more flavor and less seeds and goes well with this recipe. If you do not have access to the English cucumber, you can use the regular seedless cucumber. Since they are smaller in size, you will need to double the amount that you are using.

 

Cucumber Sweating: This recipe calls for "cucumber sweating". When you sweat your vegetables, you use salt to pull out the extra moisture. This is usually done when working with eggplant. You can definitely skip this step in the recipe, however, and you'll end up getting extra fluids from cucumbers, which have a large amount of water content.

 

Make sure to cut them as thin as possible. If you do not have a red onion, you can use a white onion, but the flavor of the onion will be more diffuse. Yellow onions are not recommended.

 

Can I use dried dill instead of fresh?

Fresh dill is highly preferred in this recipe. If you cannot find or cannot access fresh dill, you can use dried dill.
